Colour

Tomato is the star ingredient in a gazpacho, which should be at its appropriate point of ripeness and sweetness. The traditional recipe of Solfrío Andalusian Gazpacho also includes bread, which gives a light red colour. Colour intensity varies depending on the ingredients. Intense red in colour may look like a tomato soup instead of a gazpacho.

Smell

Describing this quality is a little difficult. Anyway, we will try. A good Andalusian gazpacho should captivate diners through the sense of smell. Smell is the prelude to taste and gazpacho should smell fresh, of traditional recipe and summer. It is a good sign if when smelling gazpacho we feel like having it. It is important to use the correct amount of garlic, pepper and vinegar.

Taste

Taste is the key of a good gazpacho. Besides likes and preferences, we should obtain an enveloping and refreshing taste leaving a nice feeling after having the gazpacho. Top quality ingredients are necessary for achieving this perfect combination.

Correct amount of ingredients is part of the equation. Tomato is the master of ceremonies, it is the main ingredient although each ingredient has its own space. Oil plays a very important role in the taste, oil used for making gazpacho cannot be a bitter tasting oil; Sherry vinegar should be used moderately.

A good technique: leave to marinate all chopped vegetables with extra virgin olive oil, Sherry vinegar and sea salt in order to intensify flavours.

Body

A good gazpacho is free of lumps, fine in texture and producing smoothness on the palate. This is achieved by mixing all ingredients thoroughly (tomato, cucumber, pepper and country-style bread) and adding the appropriate amount of extra virgin olive oil and Sherry vinegar.
